quiche tuesdays…

I know it’s not a Tuesday, but I’ve been meaning to put this post up for a long time now, so with a bit of spare time on my hands today I figured I might as well get to it. For religious reasons I’m a vegetarian on Tuesdays and after the first time I made this fabulous quiche I find myself constantly coming back to it as my Tuesday night dinner fix. The BF is a huge fan as well, which is always an added plus! Now, I have no intentions on making any of you believe that I came up with the recipe for this on my own, instead I follow this recipe with a few slight alterations:

  • I usually use 5 eggs instead of 4 — I find it comes out fuller this way. 
  • I completely skip the step where it says to dust one side of the crust with flour.
  • I don’t think I’ve actually ever used Monterey Jack or Parmesan cheese, but I usually just use whatever I have available in the fridge and I’ve never been disappointed.
  • Lastly, I’ve never used the 1/8 teaspoon of dried dillweed — I may be into cooking, but really who actually has that lying around in their spice cabinet?!

I’d say the most annoying step of the whole process is washing and cutting the spinach, but besides that it’s a quick and easy and delicious recipe. If you guys decide to try it out, please let me know how it goes and if it becomes a hit in your kitchen as well!! I’m looking forward to trying some other types of quiches, anyone have any suggestions?!
